Brett Williams brings 22 years of culinary expertise to the trailer as a seasoned chef and the proprietor of Orta Trattoria in Kingston. With a rich background, Brett previously owned and managed Orta Ristorante in Pembroke, where his fervor for wood-fired pizza was ignited.

A pivotal chapter in Brett’s culinary exploration unfolded during his early twenties when he immersed himself in the culinary landscape of Italy, primarily exploring regions north of Lazio. There, he honed his skills by staging in diverse establishments, from Trattorias and Osterias to Michelin-starred restaurants, including the esteemed Ristorante da Caino, recently awarded “Best Tuscan Restaurant in the World.”

Despite the diverse culinary experiences, his heart always gravitated towards pizza—a love cultivated from his youth. Now, his passion drives him to share the art of pizza with the South Shore, building on the rich culinary legacy established through years of dedication and exploration.

For nearly 18 years, Jay Layman has been immersed in the world of cooking professionals and recipe developers as an art director at America's Test Kitchen in Boston. However, it was the transformative experience of becoming a dad in 2017 that propelled him to leverage that accumulated knowledge for a personal endeavor. Inspired by renowned pizza artisans like Chris Bianco and Ken Forkish, he dove into the world of pizza dough experimentation, initially as a hobby and a means to nourish two exhausted new parents.

Through the exploration of countless recipes and hundreds of pizzas made at home, his journey evolved. Jay found himself creating a unique sourdough starter, investing in specialized equipment, and sourcing the finest ingredients available. Pizza making has blossomed into a profound passion for the craft. He began a small side business, Laymo Dough Pizza, that caters to private events, bringing fresh pizza from his portable ovens to the guests' plates. Fueled by this passion and a desire to share his love for pizza, Jay is dedicated to bringing an indelible pizzeria experience to the South Shore.
